Sometimes nature takes us on unexpected adventures. This was certainly the case when a small block of errant Semillon was happened upon by thick Botrytis early into the harvest season. This surprise blessing gave me the opportunity to create one of my absolute favorite styles of dessert wine. The result is a mouth-watering Trockenbeerenauslese (TBA), that is, in my admittedly biased opinion, as good as any first-rate Sauternes!
Boasting nearly 200 g/L of residual sugar, this dessert wine is, simply put, epic. The bouquet is enormous and demands your complete attention. The nose just checks off the list of tropical fruits, stone fruits, and all sorts of candies—Violet flowers and honeysuckle too! The palate is like tasting the sun. My mouth is watering just writing this description. Normally, I would recommend stashing some in the cellar for a couple of decades, but I defy you to find me the person with that kind of willpower. Bottled in full 750ml format, because why not?
